From my little corner on the Pasteleria station, I have a great view of the plate-up table in Primeros. This is a shot of the preparation for the Ensalada Tibia– which is just a garden salad in the way that Versailles was just a house. There’s a tremendous amount of work that goes into the dishes at Martin Berasategui, and I’ve learned to value not only the end result, but also the colorful assemblage along the way.
